Bran Bread
Let’s start the year semi-healthy! My mom made these bran muffins when I was growing up. We would slice them in half, put a pat of butter in the middle and microwave them. I enjoyed taking a bite of the warm muffin with the melted butter inside. Now, I skip the butter but will warm them a bit. I still make them as muffins, but mostly I like to make loaf bread.

1 ¼ cups regular flour
1 tablespoon baking powder
¼ teaspoon salt
½ cup sugar
1 ½ cups All Bran cereal (I use Trader Joe’s High Fiber Cereal)
1 ¼ cups milk
1 egg, slightly beaten
2 tablespoons vegetable oil
Stir together flour, baking powder, salt and sugar. Set aside.
Measure cereal and milk into mixing bowl. Stir to combine. Let stand 1-2 minutes or until cereal is softened. Add egg and oil. Beat well. Add dry ingredients to cereal mixture, stirring only until combined.
Bake in a 400 degree oven for 20 minutes or until bread/muffins are golden brown.
Makes 12 muffins or 1 loaf bread.
