My husband does not get in the kitchen too often, but when he does watch out!  The kitchen looks like a tornado hit it but everything turns out delicious.  He made this salsa over the weekend and it was delicious.  I enjoyed the crunch and sweetness of the corn, the creamy avocado and the pungent flavor of the cilantro.  This salsa did not last very long with four people diving in.

Fresh Salsa

2 ears fresh corn, removed from cob
3 medium tomatoes, diced
2 small avocados, diced
1 large bell pepper, roasted and diced
1/2 medium onion, finely diced
1/3 bunch cilantro, chopped
Juice from 1/2 lemon
Salt to taste
