Kogi BBQ has become my favorite food truck. It helps when they park less than one mile from my home a couple times per week. Kogi is a fusion of Korean BBQ and Mexican food. Although we’ve tried many items on their menu, I always have to get what they are known for…the short rib tacos. The short ribs are marinated and grilled to create a tender texture, and then there is a slight caramelized flavor that gives it a little zing. They place the meat in little homemade tortillas and top them off with a romaine and cabbage mixture tossed in Korean chili-soy vinaigrette. The combination is simply mouth watering!
