Mango Margaritas
Last summer we were all at Costco. Long story short…don’t take Dylan to Costco because you walk out with a whole lot more than you planned. We purchased a Vita Mix blender. The boys would tell anyone who would listen about this machine. My uncle wondered if they were the official spokespeople. It came with a great cookbook and there was a recipe for whole fruit margaritas. So instead of using a sweet and sour mix, you use fresh citrus fruit. We have made the margaritas several times and decided to add mangos since I have a very generous mom from my son’s school who gives me mangos like they’re going out of style! Although you may not have a Vita Mix blender, just give it a try in your regular blender.
Mango Margaritas

¼ cup water
6 ounces tequila
2 ounces Grand Marnier or Triple Sec
1 medium orange, peeled, halved
1 lime, peeled, halved
1 lemon, peeled, halved
½ mango, peeled, halved (sometimes I’ll freeze it and use less ice)
¼ cup sugar
5 cups ice cubes
Place all the ingredients into a blender. Blend at high speed until smooth. Pour into salt-rimmed margarita glasses.
Yields: 8 cups
