Rocky Road Candy
Way back in 1985, my mom bought a fundraiser cookbook. The cookbook was presented by Professional Home Economists; Home Ec teachers from around the country. Well out of this cookbook has come one of our favorite candy recipes, Rocky Road Candy. My mom always said she would rather make this than fudge because it is such a simple recipe. She usually made it for Christmas but I’ve been known to make it year round. Imagine that! Tonight I’ll be taking it to my grandma’s house for the harbor boat parade. JOY!
Rocky Road Candy

1 12 oz. package chocolate chips
1 12 oz. package butterscotch chips *
1 cup peanut butter
1 10 oz. package miniature marshmallows
1 cup salted peanuts
Mix together chocolate chips, butterscotch chips and peanut butter. Place in microwave until melted; stirring every 45 seconds.
Add the marshmallows and peanuts. Mix. Spread the mixture in a greased 9” x 13” glass baking dish. Refrigerate until firm. Cut into squares.
*Note:
Sometimes I will omit the butterscotch chips and just use all chocolate chips.
