Zippy Rarebit Spread
I like to keep my holiday menus simple for me and fun for my kids. Being Irish I’ve never made and honestly don’t remember ever eating Corned Beef and Cabbage. On St. Patrick’s Day we had Lucky Charms for breakfast, lime jell-o for lunch, potato soup for dinner and mint ice cream sandwiches for dessert. To go along with our Potato Soup I made a cheese spread for our crackers.
This cheese spread has been a family favorite for as long as I can remember. I asked my mom where she found this recipe. She said it was many, many years ago on the back of a Ritz cracker box. I checked the Nabisco website and they no longer have this recipe printed. All the more reason to share!
Zippy Rarebit Spread

4oz. sharp, natural cheddar cheese, grated (about 1 cup)
8 oz. cream cheese
1 tsp. Worcestershire sauce
Dash Tabasco Sauce (optional)
6 slices of bacon, cooked and crumbled
Combine first four ingredients in a heavy saucepan over low heat. Cook, stirring frequently, until smooth and bubbly. Blend in bacon bits. Serve warm with crackers.
Yields about 1 ½ cups
